Salsa Chicken
This recipe is similar to the one already posted, but it doesn't have as much in it. All I do is put several chicken breasts into the crock pot (they can be frozen or thawed). Cover them with any kind of salsa that you like. Turn the crock pot on high for a 2-3 hours and then turn it to low until you are ready to eat. When it is done I shred it with a fork. We like eat it on tortillas, but you could serve it with rice and beans cheese and sour cream (or whatever you like to put on your mexican meat), and it would make a delicious meal also. It would also be good on top of a taco salad. You can make extra and freeze it for later too.
